Enjoy this easy, customizable dish—with your choice of protein drizzled with succulent balsamic blaze and tasty potatoes and bell peppers seasoned with your favorite spice blend. Create a dish everyone will love in just 15 minutes. Serve it over rice or cauliflower rice or wrap it up in a tortilla or lettuce cup.
1/2poundorganic potatoes, scrubbed and cut in 1/2-inch pieces (See TIP)
1/4teaspoonground black pepper
1organic bell pepper, any color, seeded and cut in 1/2-inch pieces
2teaspoonsSmokin’ Barbie, The ONE, Chorizio, or your favorite seasoning (or less to taste)
1/2teaspoonred pepper flakes, or to taste (optional)
6ouncestop sirloin, cut in 1/2-inch wide strips (medium shrimp, boneless pork, or chicken breast may also be used)
2tablespoonsbalsamic glaze
Instructions
In a large skillet over medium-high heat, heat 2 tablespoons of the oil until hot but not smoking. Add the potatoes and season with salt and pepper. Cook, stirring occasionally, for 7 to 8 minutes until the potatoes start to soften. Stir in the bell pepper, your seasoning choice, and red pepper flakes, if using. Cook, stirring occasionally, until the potatoes are tender,and the pepper is crisp-tender, 2 to 3 minutes. While the vegetables are cooking, prepare your meat.
Pat the meat strips dry with a paper towel. In another large skillet over medium-high heat, heat the remaining oil until hot but not smoking. Add the meat and cook, stirring occasionally, until lightly browned but not yet cooked through, 2 to 4 minutes. Add the balsamic glaze and cook, stirring occasionally, until the meat is cooked through, about 30 seconds for regular shrimp; 2 to 3 minutes for steak or pork, and 4 to 5 minutes for chicken. Stir the potato mixture into the meat mixture.
Season with additional red pepper flakes, if desired.
Notes
Ingredient TIP: I like to use multi-colored potatoes and mixed colored peppers for aesthetic as well as nutritional reasons. To expedite the prep and cooking time, you could use already cubed, frozen SnoPac Organic Southern Style Hashbrowns. You could also use Hash Browns O’Brien if you’re okay with onion and less bell pepper.
